So I was in Japan for the last two weeks of November. I've been busy catching up at work, and I haven't really gone through all the photos that I took over there, I'm sad to say I don't think I came back with any amazing photos, hopefully there's some decent ones in there. We'll see, once I go through them. I still haven't quite put together all my thoughts on the trip, I intended to keep a journal of all the things I had done, but it never happened. Hopefully, I'll put some kind of summary together in the next few weeks, before I forget. But in short, Japan was amazing.
I picked up this album on the trip, by Spangle call Lilli line, entitled 'Purple.' I don't know, it called out to me at the store.

TCHO
So I got my grubby hands on some TCHO Chocolate, which happens to be in beta. I thought it was very good dark chocolate that is worth a try, but I didn't think it was anything super special. I do think they have a very good marketing strategy.
So they've currently got three varieties of dark chocolate: Chocolatey, Nutty, and Fruity.
I have to say Chocolatey was my favorite. I really liked the texture, it had a nice snap to it and melted well on the tongue. It wasn't overly sweet, which I really liked. It had a pleasant aftertaste which had very little bitterness.Nutty: I couldn't really tast the nuttiness, but it didn't have the same snap as Chocolatey. It seemed a little bit creamier and sweeter as well.
Fruity: This chocolate was citrussy, probably from the actual cacao fruit. I'm not particularly fond of the chocolate and citrus combo, but this was still pleasant.

Another One Bites the Dust...
So it's that time of year, and another one of my friends has gotten himself married. The wedding turned out pretty well, much better than I expected. He clearly had very little to do with the planning, I imagine. Just kidding. I was pretty happy how these turned out. I'd like to think my photography skills are improving, but the reality is that it's probably just my photoshop skills that have improved.
All jokes aside, it was a good time. I had time to reflect in my car on the drive up and back, got to meet some new people, hang with some old buddies, and be a part of this special event. Good times.

You brewing coffee in there?
I gotta say, it was one of the funniest things I've heard in the washroom at work. Awhile back, there was a guy in the stall next to me making some pretty funky sounds, not too different from the sputtering sounds of a drip coffee machine. I like to call it explosive diarrhea, it's like someone sticking a firecracker in your ass. Well anyways, somehow one of this guy's buddies recognized him by the grunts he was making then proceeded to call out his name and asked, "Hey, you brewin' coffee in there?" Much to his chagrin, he replied, "Yep, hot and fresh." Haha, that kept me amused for the rest of the day.
So today, I was in the washroom and was about to finish up, the guy in the stall next to me started snoring. I've nodded off a couple times while sitting on the toilet, but I've never passed out and started snoring. At first I thought he was just constipated and breathing heavy. But naw, this guy was out. I decided to wait a little bit to see if he'd wake up. A minute passed by, so I started coughing and making some grunting sounds, nothing. At this point I decided to sit quietly and wait for someone else to come into the washroom and hear this guy snoring, that would have so made my day. I sat there for 10 minutes quietly giggling to myself. You know, hunched over and all, twiddling my thumbs and making "tee hee hee" sounds through my teeth.No one else came in, seriously WTF? There's always someone in the washroom. So after 10 minutes I gave up, I flushed the toilet twice (not because it warranted a double flush, but) just to see if he would wake up. Nothing. Thoroughly disappointed, I made sure to get a good look at his shoes before I washed my hands and left, so that I can put a face with those shoes next time I see them. Yes, I am easily amused.

Summatime...
So I've been keeping busy and life has been pretty uneventful for me as usual, but I guess I'll share some of the boring things that I've been up to to help keep me sane.
I had some time to take some pictures demonstrating the use of the chemex. And yes I agree with the comments from the other post that it is overpriced for what it is, but if you can pick one of these up cheap it is totally worth it. Hell, all you need are the filters, I'm sure a flower vase would work fine. The reality is a chemex brewer is just a manual drip coffee machine, but it works so well.





Over the long weekend I tried to do some baking, this particular time I tried making Ciabatta bread. I've determined that I can't bake for shit. Since baking is all about getting the right ratio of ingredients I figured it'd be a lot easier. I mean, come on...fractions? I can do that in my sleep. They don't look too bad in the pictures and they're not the usual bricks that I typically come up with, but the texture and taste just wasn't right. Oh well, maybe one day I'll get it right.



I recently fixed up my old mountain bike that I used to use at school. The last time I used it was in 2005, I was heading home one night after a Metallica concert and I taco'd the wheel and almost bit the curb. After that I pretty much neglected it and let it rust. But a couple weekends ago I replaced the wheel and chain and have been riding around the trails at the local forest preserves. BTW, sorry to hear about the biking accident Redliner7.
I've been grilling out a lot on the weekends, lately. I saw this article on how to turn you grill into smoker, and it works pretty well. I made some brisket this weekend, but I'll have to modify the seasoning I used...I used too much pepper, it kinda had that peppery beef jerky taste. Sorry no photos.
These photos were from the previous weekend, just grilling some burgers. I'm not sure what I think about the post processing. The colors are a little strange, but I think I like it. It's almost surreal.



Other than that I've been playing my guitar. I always liked that Colbie Caillat song, "Battle", so I decided to learn it. It actually turned out pretty bad...meh. Man, if I had an awesome raspy voice, I don't know what you call it...some 'controlled chaos' like you hear in most rock/metal music that would be awesome. I would so do different songs..they'd still probably suck though.

Chemex FTW
Here's a quick update, I'll keep this short because I really need to get to sleep.
The office desk is still a mess, if not worse, but most of my deliverables are out now and I didn't deviate from the schedule too much.
The Chemex brewer is awesome! I cannot go back to automatic drip coffee machine, it's just not the same. It's a close call between the Chemex and French Press. I think the French Press has slightly better flavor, but I think I prefer the Chemex. You still get a nice full bodied flavor from the coffee through a Chemex without the sediment. Call me a wuss, but I don't care much for that "mud" you get when you use a French Press. Maybe a coarser grind will help?
So far, my favorite coffee that I've tried from Intelligentsia is this one:
But really, they're all good.

I don't know, I don't think I can go back to those really dark roasts anymore. Damnit Intelligentsia, you took away my love for dark roasts...but I guess that's for the best.
Also, my friends and I have purchased our tickets for Japan. We are going to do two weeks in Tokyo & Kyoto with a couple of day trips from both cities. Next, on my list is figuring out where we are going to stay. So, if anyone's been there, from there, or lives there...please feel free to give me any info/suggestions that you may have. Any help would be appreciated so that I can plan stuff out.

It's been awhile since the last post. I've been keepin' busy at work.
I had to blur stuff, shit is confidential.Taken out of context this looks pretty fucking messy, but relative to some of the other desks, it ain't so bad. And there is some rhyme and reason to this mess, well that's what I tell passersby. Poor is the man who believes his own lies.
And just when I thought I was ahead with things and getting stuff out on time, all of a sudden it feels like there's too much shit in the boat and it's sinking fast. So to counter balance the stress levels, I gave into materialistic desires and bought some new toys.
I picked up two new knives from Shun. Just awesome. I had so many small cuts on my fingers the first time I used these... they are ridiculously sharp. One is an 8" chef's knife, the other is a 4" paring knife.I also picked up a new LeCreuset grill pan, which is what I cooked these steaks on. Gotta put that fond to good use.
One weeked I also tried making some omu-rice, I fucked up the egg though.
I found a new japanese bakery, which has your various an pan. I'm not sure which one I like more, they're both comparable.

It all looks the same.I hit up Beer on the Pier (Navy Pier), to be honest it sucked pretty hard. You may be asking, "But, how can a beer tasting event suck hard?" Well, there wasn't as much selection as I thought there'd be, and it was all your typical brews, and at $40/person...I won't be going next year. The session was for three hours, my friends and I had I big lunch so we only lasted 1.5 hours. I will say my favorite beer there was from Magic Hat, I forgot what the beer was called, but it had a light, citrus taste, clean finish...almost like tea.
We saw this on the way back; maybe these guys were at beer fest too.I had to go into the office a couple of weekends ago to catch up on things, or rather attempt to catch up on things. When I was done, I figured it was nice out and I might as well enjoy the rest of the day, so I stopped by Millennium Park and took some cliché shots of the bean, then headed for the lake front. Yes, I'm asian.
Several weeks ago, I decided to finally walk into a coffee shop that I've been walking straight past for the last two years. Best decision ever, I wish I had gone in sooner. Intelligentsia has the best coffee in Chicago. I believe they also have one location in L.A. I am a big fan of dark roasts, I like that bold flavor. At Intelligentsia, they don't seem to roast their beans as much as some other places (*cough* Starbucks, read burnt). So their coffees have nice full flavor without that overly roasty taste. Suffice to say, I am addicted. I'll have to try the Chemex brewer tomorrow and compare it with the french press.

Wasted Years?
It's been a little over 2 years since I've started working at the engineering firm (that should explain my poor writing ability) that I've been working at, and almost 3 years since I graduated from school. About two years ago I put some random 'reminders' in my outlook calendar, basically setting up some check points so that I could look back and reflect on where I was in life, what I've accomplished, and where I've failed.
Three years ago, the job market wasn't fairing so well and things just weren't going the way I had planned. This song pretty much summed up the way I felt.

Since then, I've made some good accomplishments and even completed some of the goals that I had set for myself. So in short, I think I'm happy with where I'm at. There's many things I've failed miserably at, but I think I've still got some time left to turn that around. Now while I don't consider myself old, I am getting older. Many of my friends have gotten married this past year, and another one scheduled for August. I myself, am nowhere near that stage in my life, and it does put things in perspective...time goes by fast.

Cinema & Culinary Endeavors
When I first heard about the Jet Li & Jacky Chan movie a while back, I was pretty excited about it.
When the trailers came out...not so much. The trailers started off okay, I thought to myself, "Ohh it's a period film, wait an epic? No, it's Jacky Chan it's gotta be a comedy." Then as the trailer progressed, bam, a fucking white kid appears out of nowhere.
And I thought to myself, "Oh fuck noooooo!" And after that, I kinda lost interest in seeing it. Apparently not for long... I was kidding myself, if a movie has Jacky Chan or Jet Li in it, I'm probably going to go watch it. And you know that Last Samurai movie with Tom Cruise didn't turn out so bad, in fact it was probably my favorite movie of the year.
... ok ok it was my favorite movie of the year. I have a bootleg dvd, I bought the real dvd, and I have the blu-ray...so embarrassing. Anyways, I saw it yesterday and I enjoyed it. It's no academy award winner, but it was what it was, a good cheap laugh. It had some faint elements of Crouching Tiger, Hidden Dragon (the choreography was more on the fantasy side, they also shot the film in gorgeous locations), the Karate Kid, and that Chuck Norris movie Sidekicks. Both Jet Li and Jacky Chan are getting wrinkly. Collin Chou (you might recognize him from the Matrix) was in it as well, his fight scenes in the movie weren't all that great though. I do think he is very skilled, I suggest watching Donnie Yen's movie Flashpoint. The final sequence between Donnie Yen and Collin Chou is great. On a side note, before the movie we hit up a Japanese restaurant called Kitakata, it's a small place serving mostly homestyle Japanese food, and supposedly ramen was their specialty (it got good reviews on yelp.com). My friends and I each got some kind of ramen, I got the shio chashu ramen, and to be honest I was kinda disappointed. The ramen a Santoka Ramen is much better.
Today, however, was much less eventful. I spent the majority of it making demi-glace au boeuf( 'cause I can't find any damn veal bones). I knew it was going to be time consuming, but not to that extent..it was relaxing though. It started off with about 8lbs of beef bones for the stock and hours of reducing.
Then I added the stock back to a red wine/shallot reduction....
and after even more hours of reducing, it yielded this...
No not really, there's more sitting in ice cube trays in my freezer...but ya. I don't know whether to cry for joy, or the fact that my hard day's work can be measured in an 8 ounce measuring cup. =*(
I'll have to put this stuff to good use tomorrow. I am now going to go cry myself to sleep.
